CCMA CH 4 REVIEW (Nutrition - Minerals)

TermDefinition
minerals - inorganic substances the body needs in small quantities for building and maintaining body structures - essential for life as they contribute to the many crucial life functions
minerals' functions - give bone rigidity and strength - help muscle contraction and relaxation - regulate body's acid-base balance - essential for normal blood clotting and tissue repair - cofactors for enzymes (help those substances in performing metabolic function)
classification Major: should be consumed in amounts of 100mg+ - calcium, sodium, potassium, phosphorus, magnesium Trace: need 20 mg or less a day - iron, iodine, zinc, copper, fluoride, selenium, chromium, manganese, molybdenum
calcium major functions: bone and tooth development, nerve and muscle function, normal blood clotting food sources: dairy products, green/leafy vegetables, broccoli, kale, almonds, fortified cereal
magnesium major functions: carbohydrate and protein metabolism, muscle contraction and structure food sources: legumes, nuts, bananas, whole grains, green/leafy vegetables
phosphorus major functions: formation and maintenance of bones and teeth, energy production food sources: meat, fish, dairy products, eggs, legumes, whole grains, carbonated beverages
potassium major functions: muscle contraction, fluid balance, nerve, muscle, and heart function food sources: bananas, raisins, oranges, vegetables, meat, dairy products, legumes, molasses, peanut butter, potatoes
sodium major functions: fluid balance, glucose transport, acid-base balance, muscle and nerve function food sources: salt
iron **not a major mineral, but it's on list because of its importance w/ red blood cell production; iron deficiency anemia can cause problems (esp. infants/children) major functions: formation of hemoglobin in red blood cells for oxygen transport, contributor to enzymes and protein food sources: meat (esp. organ meats), fortified cereals, green/leafy vegetables, molasses, legumes, dried fruit
