| vitamins | - organic substances the body needs for various cellular functions - body can produce D, A, B so the rest need to come from dietary intake - don't provide energy, but necessary for the body to metabolize energy |
| vitamins storage/products | - some manufacturers add vitamins to their products to make them more nutritious (ex. fortified cereals, juices, milk) - vit. C and E help some foods last longer ; E especially can keep vegetable oils from getting rancid |
| large amount of vitamins | niacin - lower cholesterol vit. C - help with bone and wound healing |
| major classifications based on solubility | their absorption, transportation, storage, excretion, depend on availability of that substance in which they dissolve - Fat Soluble vitamins: A, D, E, K - Water Soluble vitamins: B1, B2, B3, B6, B12, folate, pantothenic acid, biotin, C |
| vitamin A (retinol) | major functions: night vision, cell growth and maintenance, skin and mucous membranes food sources: milk fat, meat, butter, leafy vegetables, egg yolks, fish oil, yellow and orange fruits |
