CCMA CH 4 REVIEW (Nutrition - Vitamins)

vitamins - organic substances the body needs for various cellular functions - body can produce D, A, B so the rest need to come from dietary intake - don't provide energy, but necessary for the body to metabolize energy
vitamins storage/products - some manufacturers add vitamins to their products to make them more nutritious (ex. fortified cereals, juices, milk) - vit. C and E help some foods last longer ; E especially can keep vegetable oils from getting rancid
large amount of vitamins niacin - lower cholesterol vit. C - help with bone and wound healing
major classifications based on solubility their absorption, transportation, storage, excretion, depend on availability of that substance in which they dissolve - Fat Soluble vitamins: A, D, E, K - Water Soluble vitamins: B1, B2, B3, B6, B12, folate, pantothenic acid, biotin, C
vitamin A (retinol) major functions: night vision, cell growth and maintenance, skin and mucous membranes food sources: milk fat, meat, butter, leafy vegetables, egg yolks, fish oil, yellow and orange fruits
vitamin B (thiamine) major functions: carbohydrate metabolism, heart nerve and muscle function food sources: whole grains, meat, legumes, nuts, seeds, yeast, rice
vitamin B2 (riboflavin) major functions: fat and protein metabolism food sources: organ meat, dairy products, fortified grains, greens, leafy vegetables, eggs
vitamin B3 (niacin) major functions: carbohydrate and fat metabolism food sources: fish, meat, poultry, fortified grains
vitamin B6 (pyridoxine) major functions: enzyme assistance in amino acid synthesis food sources: fish, meat, poultry, grains, nuts, beans, legumes, avocados, bananas, prunes
vitamin B12 (cobalamins) major functions: protein and fat metabolism, nerve-cell maintenance, cell development food sources: meats, seafood, dairy products, eggs, molasses, yeast
biotin major functions: carbohydrate, protein, and fat metabolism food sources: liver, cereals, grains, yeast, legumes
vitamin C major functions: immunity, iron absorption, structure of bones, muscles, and blood vessels food sources: berries, citrus fruits, green peppers, mangoes, broccoli, potatoes, cauliflower, and tomatoes
vitamin D (calciferol) major functions: calcium absorption, bone and tooth structure, support of heart and nerve function food sources: *sunlight, fortified milk, eggs, fish, butter, liver
vitamin E major functions: protection of cells from destruction, formation of blood cells food sources: fortified cereal, nuts, vegetable oils, green, leafy vegetables
folate major functions: maintenance of red blood cells, genetic material development food sources: liver, green/leafy vegetables, beans, asparagus, legumes, some fruits
vitamin K major functions: normal blood clotting, bone growth food sources: green/leafy vegetables, dairy and grain products, meat, eggs, fruits
pantothenic acid major functions: release of energy from carbohydrates and fats food sources: meat, grains, legumes, fruits, vegetables
