CCMA CH 4 REVIEW (Nutrition - Carbohydrates)

TermDefinition
carbohydrates organic compounds that combine carbon, oxygen, and hydrogen into sugar molecules and come primarily from plant sources ; comprise the majority of our diet - 1 gram = 4 calories
carbohydrates' functions energy for cells and their fuctions
simple carbohydrates ex. honey, candy, cane sugar - 1 or 2 sugar molecules
complex carbohydrates ex. fruits, vegetables, cereal, pasta, rice, beans, whole-grain products - long chains of hundreds or thousands of sugar molecules - includes starch ; glucose plants do not need immediately for energy - fiber
starch stored in seeds, roots, stems - ex. potatoes, wheat, rice, corn, barley, oats, some vegetables
carbohydrates intake too little - protein loss, weight loss, fatigue too much - weight gain and tooth decay
glucose - simple sugar that the body requires for all energy needs - body burns it more efficiently than proteins or fat - important function of the sparing protein to be available to replenish blood cells and heal wounds
glucose functions - body converts all other digestible carbs into glucose (excess glucose stored in liver as glycogen for when it's needed) - used to create nonessential amino acids from available essential ones - makes other compounds, but eventually makes fat
MyPlate recommendations - requirements for fruits, vegetables, and grains separate - protein foods contain carbs, but dairy is a separate category - discourages sweet desserts, snacks, soft drinks, candy, and anything w/ added sugars (high calories, low nutritional value)
limit added sugars - drink water, unsweetened tea or coffee instead of soda - choose drinks that will help fulfill daily requirements in dairy and fruit - choose fruit as naturally sweet dessert or snack instead of foods w/ added sugars
