Internal temperature

Beef Roasts, steaks and chops(rare) 145 degrees
Beef Roast, steaks and chops (medium ) 160 degrees
Beef Roast, steaks and chops ( well done) 170 degrees
Ground meats 155 degrees
Pork roast, steaks and chops(medium) 140-145 degrees
Turkey/Poultry 165 degrees
Pork roast, chops, steaks(well done) 160 degrees
Ham (fresh) 160 degrees
Ham (precooked) 140 degrees
Egg dishes 160 degrees
Whole poultry 180 degrees
Holding temperature for hot foods 140 degrees or higher
Holding temperature for cold foods 41 degrees of lower
Foods should be reheated to what temperaure? 165 degrees for 15 seconds
Freezer temperture -10 to 0 degrees
Refrigerator storage 41 degrees or lower
