fresh fish should be rejected... if the skin is dry
how to detect the temperature of bulk milk insert the thermometer stem or probe between 2 packages
how to measure the temp of meat poultry or fish insert the thermometer or probe into the thickest part
how to measure the temp of MAP or vacuum packed foods insert the probe between two packages
fresh poultry should spring back when touched
USDA stamp of inspection means the product and plant have been inspected
a MAP package that has bubbles inside... can mean that pathogens have grown and it should be discarded
