types of cookie dough and problems

Soft dough High in moisture; high proportion of eggs; soft and moist cookie
Stiff dough Contains more flour tham soft dough; less liquid and eggs; crisp cookie
Very stiff dough Lowest in moisture content; Ice box cookie
Problem- too much spread Too much sugar; dough too soft; too much grease on baking pan
Problem- Not enough spread Sugar ground too fine; dough overmixed; oven temperature too high
Problem- Tough Dough overmixed; flour too strong in gluten; not enough fat
