What should you do preparing TVP? Follow manufactorers instructions Soak in water Drain in water
What are advantages of TVP? Is good nutritional alternative to meat, good source of dietary fibre, little preparation & cooking time, no shrinkage occurs
What are the disadvantages of TVP? TVP has an inferior texture of meat, often bland tasting
What is microprotein? High protein food produced from micro organisms. it is made from the fungal biomass of a soil fungus.
What is the manufacture of mycoprotein? 1. Fermentation 2. Addition of ingredients 3. Harvested, purified and dried 4. Bound 5. Input additives 6. Textured and shaped 7. Steamed
What is Quorn? Is a meat substitute product made from mycoprotein and sold in ready to cook forms, such as mince.
What is the advantages of Mycoprotein? Good nutritional alternative to meat. Good source dietary fibre. Low in saturated fat. Versatile food.
What is the disadvantages of Mycoprotein? Have interior texture to meat, Are not suitable for vegans
