Brewery microbes

Obligate anaerobe thriving in very low DO levels, associated with biofilms and found in modern bright beer. Megaephaera

Converts sugar into alcohol, acetaldehyde and hydrogen sulphide. Grows rapidly in sugar solutions. Zymomonas
Obligate anaerobe producing high levels of acetic acid and hydrogen sulphide. Pectinatus
