| Sensory Characteristics | The qualities of a food identified by the senses. |
| Sensory Evaluation | Scientifically testing food, using the human senses of sight, smell, touch, taste, and hearing. |
| Sensory Evaluation Panel | A group of people who evaluate the sensory characteristics of food samples. |
| Taste Blind | The inability to distinguish between flavors of some foods. |
| Taste Bud | Sensory organs located on various parts of the tongue. |
| Volatile | Easily changed into vapor. |
