Grease Spot Test (brown paper bag) Test used to identify the presence of lipids in foods
Structure of Saturated Fats Holds the maximum number of hydrogen atoms; composed of all single bonds between carbon and hydrogen atoms
Structure of Unsaturated Fats Does not hold the maximum number of hydrogen atoms; a double bond is present between carbon and oxygen preventing the ability to bind to more hydrogen atoms
