| unit pricing | the cost per standard unit of weight or measure for a product |
| open dating | a dating process of food that gives information about the freshness of food |
| pack date | date on foods stating when it was processed |
| pull date | date on food products stating the last day they should be sold, also called the sell-by date |
| freshness date | date indicating the end of the product's peak quality |
| expiration date | the last day the food should be eaten or used |
| food additive | a substance added to food for a specific purpose |
| universal product code (UPC) | a group of bars and numbers appearing on a product that contains price and product information |
| meat | the edible portion of animals, including muscles and organs |
| poultry | any domesticated bird used for meat or eggs |
| finfish | fish that have fins and backbones |
| shellfish | fish that have shells instead of a backbone, for example, crabs, lobster, scallops |
| legume | seeds that grow in the pods of some vegetable plants |
| meat analog | a plant based protein product made to resemble various kinds of meat |
| produce | fresh fruits and vegetables |
| cereal | a starchy grain used as food, such as wheat, rice, corn and oats |
| pasta | grain products such as spaghetti, noodles, and macaroni |
| pasteurization | a heating process that destroys harmful bacteria in dairy products |
| homogenized | process by which milk fat is broken down into tiny particles that remain suspended throughout the milk |
| natural cheese | cheese made from milk, whey or cream |
| process cheese | cheese made by blending or melting two or more natural cheeses |
| food rotation | storing the freshest foods at the back of the shelf so that the oldest foods will be used first |
| aseptic packaging | technique in which food and containers are sterilized separately before food is packaged into the container in a sterilized chamber |
| retort packaging | shelf stable food packaging method in which foods are sealed in a foil pouch and then sterilized |
