When are foods properly cooked? when they reach a high enough internal temperature to kill the harmful bacteria that cause foodborne illness
At what temperature should hot food be held? 140ยบ F or higher
How do you keep hot foods hot? use chafing dishes, slow cookers and warming trays
How do you transport hot food to an outdoor party? use insulated thermal containers
Why can steak be cooked rare but hamburger meat is not safe to be cooked rare? hamburger meat has been ground up and has had many opportunities for cross-contamination
How do you know if a food is done? use a thermometer and a food safety cooking temperature chart
How do you reheat sauces, soups, and gravies? bring them to a rolling boil
What precautions do you take when cooking in a microwave? watch for no cold spots, cover food, stir and rotate for even cooking, and observe stand times.
Can all microorganisms be killed by home cooking? no, there are some spores that can survive home cooking and produce toxins as the food begins to cool
Why can't you reheat leftovers as many times as you like? each time you reheat the leftovers you increase the likelihood of cross-contamination
