At what temperature do you hold cold food? 40 degrees fahrenheit or below
A what temperature should the freezer be held? at 0º F or below
How long can perishable food be left out before refrigeration? no more than 2 hours
If it is 90º fahrenheit how long can I leave food out before refrigeration? no more than 1 hour
Why is it not a good idea to eat some refrigerated left overs? If you do not know how long a leftover has been in the refrigerator, you can not necessarily tell by smell or sight if it is spoiled, so when in doubt throw it out.
What is the "danger zone"? the temperature between 40º-140º fahrenheit where microorganisms grow the most rapidly, reaching unsafe numbers
Where should raw meat, poultry, and seafood be placed in the refrigerator? on the bottom shelf in a sealed container or plastic bag
What effect does refrigeration have on microorganisms? it slows down the growth of microorganisms
What effect does freezing have on microorganisms? it temporarily stops the growth of microorganisms
What is the best way to transport home-cooked food to a picnic? use an insulated cooler in an air conditioned car
How should you store leftovers? in shallow, airtight containers so that they cool faster
Why should food be placed in the refrigerator before it is completely cooled? it may be in the danger zone to long before it cools down completely
How should you thaw food? place food in the refrigerator the night before you need it, use the microwave, or thaw in a sealed plastic bag in a bowl of cold water, changing water every 30 minutes.
How long can you keep eggs in the refrigerator? eggs can remain fresh up to 2 -3 weeks in the refrigerator
What is the dirtiest part of the refrigerator? the produce bin
How should the refrigerator be cleaned? Clean regularly with warm water and mild soap, then rinse. Clean up spills immediately.
What foods should be separated in the refrigerator Raw meats should be stored in sealed containers away from vegetables and other ready to eat foods.
