Lipids have a high energy content, what is the energy they supply per gram/kJ 37g/kJ
What is the advantage of consuming a little amount of fat in food? It supplies a large amount of energy
Are lipids soluble in water and organic solvents? Lipids are soluble in organic solvents such as ethanol but insoluble in water
What are triglycerides and what is the structure? They are the form in which lipids are present in food, they are made up of three fatty acids joined to a glycerol molecule by a condensation reaction.
What is the bonds present between fatty acids and glycerol molecule? Ester bonds
Do saturated fats contain double bonds between carbon-carbon molecules? No
Why is it that unsaturated fats are liquid at room temperature? Because the double bonds cause it to have kinks in the chains so the molecules do not closely pack together resulting in weak inter-molecular bonds.
What is cholesterol essential for? To make cell membranes, sex hormones progesterone and testosterone and bile
