Component parts of food products that are generally recognized as safe. Ingredients
What are food additives? Substances added to a food to cause a desired positive change in the product's characteristics.
Added to food on purpose, to give foods specific characteristics or resistance to spoilage. Intentional Food Additives

What is a margin of safety? The zone between the concentration in which an additive is normally used and the level at which a hazard exists.
List of all food items recognized as safe. GRAS List
What are controlled used substances? Food additive that does not appear on the GRAS list and must be used within set guidelines.
Legal document that bars the approval of any food additive found to cause cancer in humans or animals. Delaney Clause
What are Preservatives? Substances added to food to prevent or slow spoilage and maintain natural colors and flavors.
Preservatives that prevent growth of microbes in food. Antimicrobial Agents
What are sulfites? Antioxidant salt containing sulfur.
What are esters? Organic compound combined with an alcohol to produce a synthetic flavor.
Agents that absorb moisture and are used to keep powdered and crystalline ingredients from caking or forming lumps. Anti-caking Agents
Additives used to help products retain moisture. Humectants
Chemicals that speed the aging process and whiten flour. Maturing and Bleaching Agents
An additive that alters or stabilizes the pH of a mixture pH Control Agent
