Term | Definition |
Hops | Provide bitterness from alpha acids and aroma from oils |
Adjuncts | Non malt materials such as rice, maize or sugars added to provide additional extract. |
Liquor | The water used in the brewing process - mostly added to the mash and in the sparging which rinses the grains. |
Malt | Part germinated cereal grains added to the mash to provide the main sugar extract for the wort. |
Yeast | The live cells added to ferment the wort sugars into ethanol, carbon dioxide and additional flavours. |
Air | Air is often added at the start of fermentation to provide oxygen which helps the yeast synthesize lipids in order to grow. |
