гусь goose (гусиный жир/goose fat is very common in Russian cooking)

оленина venison
бизон bison (bison steak: стейк из бизона)
кабанина boar (meat)
сом catfish (fried catfish: сом жареный)
тиляпия tilapia (tilapia fillet: филе тиляпии)
треска cod (печень трески/fish liver is very common in Russian cooking)
пикша haddock (haddock fillet: филе пикши)
карп carp (сазан is a specific carp that is much more common and considered better
форель trout (радужная форель/rainbow trout is very common in Russian cooking)
угорь eel (копчёный угорь/smoked eel is what is often sold in stores. унаги is a Japanese eel dish)

фазан pheasant (фазан тушёный/ stewed pheasant is the common form of pheasant)
кенгуру kangaroo (kangaroo steak: стейк из кенгуру) (This word has no plural) (кенгурятина is a humorous version of the word)

северный олень reindeer (оленина/ venison is the preferred and main word)
мясо аллигатора alligator (meat) (хвост аллигатора is alligator tail)
