Allelochemical secondary metabolites produced by plants, algae, bacteria, and fungi that influences the physiology or behavior of an organism of a different species. (Terpenoids, alkaloids, flavonoids)
Astrigent (ie. tannins & saponins) create pungent, tingly, and drying sensation on the oral membrane & stimulation of the trigeminal nerve – this nerve also has receptors in the oral & nasal cavity, and is sensitive to chemical stimuli.
