| Describe the structure of a triglyceride | They are made up of three fatty acids and 1 glycerol molecule, linked by condensation reactions. The bond between them is called an ester bond. |
| what is a saturated fat? | Animal fats and dairy products. |
| What is the structure of a saturated fat? | There is no carbon to carbon double bond. In a saturated fatty acid the hydrocarbon chain is long and straight. They have strong intermolecular bonds between triglycerides. |
| What is an unsaturated fat? | monounsaturated = olive oil, Polyunsaturated = vegetable oil, nuts and fish |
| Describe the structure of Unsaturated fats | They have a carbon to carbon double bond - this causes kinks in the structure and prevents it from packing closely together. There are weaker inter-molecular bonds causes them to be liquid at room temp. |
| what are the uses of cholesterol? | It is a vital component of cell membranes - it produces steroid sex hormones and some growth hormones. Bile salts that are used in Lipid digestion are also produced. |
| How is cholesterol made? | Cholesterol is made in the liver from saturated fats and also obtained in our diet (eggs, meat and dairy) |
