| What enzyme do people who are lactose intolerant lack and what does this mean? | They lack lactase so they can't break down lactose sugar in dairy products eg milk. So it ferments in the large intestine. |
| How are enzymes used to make lactose free milk? | The milk is poured over gel beads containing lactase and the enzyme breaks down the lactose into smaller sugars which can be more easily absorbed. |
| Why is it useful for us to reuse enzymes? | Extracting and purifying enzymes is very expensive. |
