Give three examples of how enzymes are used in production of everyday items. Seperates curds whey in cheese, extracting juice from fruit, biological washing powder and medical products eg reagent sticks
What is the factor that varies throught the country that can effect enzymes performance in washing powders? Very acidic or very alkaline tap water.
What common stains are large insoluble molecules that can require enzymes to be washed away? Food, blood and grass.
Which enzymes are used to break down stains and what is thier soluble product? Amylase: Sugars Lipase: Fatty acids Protease: Amino acids
What temperature and pH do the enzymes in washing powders preform best at? Between 30 and 40 degrees celcius and neutral(pH7).
What is the most common sugar in foods? Sucrose.
What enzyme is used to break down sucrose? Sucrase (invertase).
Give the word equation for the break down of sucrose? Sucrose---------->Fructose+Glucose (invertase)
Why are fructose and glucose used to sweeten low calorie foods? Thee are much sweeter products therefore less sugar is needed reducing calories.
What enzyme do people who are lactose intolerant lack and what does this mean? They lack lactase so they can't break down lactose sugar in dairy products eg milk. So it ferments in the large intestine.
How are enzymes used to make lactose free milk? The milk is poured over gel beads containing lactase and the enzyme breaks down the lactose into smaller sugars which can be more easily absorbed.
Why is it useful for us to reuse enzymes? Extracting and purifying enzymes is very expensive.
How can enzymes be immobilised? By either making them into alginate jelly beads or putting them on reagent sticks.
People with what condition have to check theyre blood glucose levels daily? Diabeties.
What modern test is used to check blood sugar? Reagent sticks.
What shades indicates a high level of glucose on a reagent stick? Dark
