B6 Enzymes in Action

Name 3 main enzymes that are used to break down different stains in biological washing powders? Amylase, Lipase, Protease.
What insoluble stain and soluble product is amylase used for? Carbohydrates e.g Starch and sugars.
What insoluble stain and soluble product is lipase used for? Fat and fatty acids eg glycerol.
What insoluble stain and soluble product is protease used for? Protein and amino acids.
What 2 enzymes are used in place of sucrose because it's not sugary enough? glucose and fructose.
What temperature is biological washing powders used at and the pH? 30-40C and neutral pH (pH 7).
What is the benefit of using biological washing powders at the temperature they are used at? Because it's low cost.
What would happen to the enzymes at high temperatures? They will denature; making them useless.
What are reagent sticks used for? they detect glucose in urine and commonly used to test for diabetes.
Why can't cats have milk and why? Because they are lactose intolerant. This means they don't make the enzyme lactase, so they can't break down the lactose sugar in milk.
How can enzymes be used to make lactose-free milk? Immobilised lactase enzyme can be added to the milk to break down lactose sugar into smaller sugars - glucose and galactose - which can easily be absorbed.
What is the benefit of immobilised enzymes? Extracting and purifying enzymes is an expensive business. So it's useful to be able to reclaim the enzymes after the reaction, to reuse them.
How can enzymes be immobilised? They can be immobilised by making them into alginate jelly beads (gel beads) or putting them on reagent sticks.
A way of immobilising enzymes is to make them into gel beads, how can this be done? To make gel beads, the enzymes are mixed with alginate and the mixture is dropped into calcium chloride solution.
What's an advantage of immobilised enzymes? They can be easily separated from the reaction mixture. The mixture is not contaminated with enzymes. Immobilising enzymes in these ways is also useful because it means they can be used in continuous flow processing.
What is the most common sugar in food? Sucrose
What are enzymes? Enzymes are biological catalysts produced by living cells.
What ways can enzymes be used? - To separate the curds and whey when making cheese -to extract juice from fruit -to alter and improve the flavour of foods - in medical products - in biological washing powders to break down food stains on clothing
