| Term | Definition |
| FIVE TASTES | There are only five basic tastes Sweet Sour Salty Bitter Umami (savoury) |
| SWEET | Caused usually by sugar & its bases such as fructose or lactose. as well as artificial sweeteners such as saccharine. Alcohols in fruit juices or alcoholic drinks can give off the sweet taste too. |
| SOUR | Acidic solutions such as lemon juice, lime juice and vinegar taste sour. Unripe fruits and some foods that are 'off' can also become acidic and taste sour. |
| BITTER | Produced by a variety of different substances & generally identified as undesirable or unpalatable. Toxic chemicals produced by poisonous plants give off the bitter taste also. |
| SALTY | Produced by salts containing sodium, such as sodium chloride, and sodium bicarbonate. Almost every fluid in our body contains salt, so we need salt to survive. |
| UMAMI | A rich 'mouth-filling' taste in protein-based foods due to the presence of glutamate. (meats, aged cheese, ripe tomato, mushrooms and soy sauce contain glutamate. |
