FIVE TASTES There are only five basic tastes Sweet Sour Salty Bitter Umami (savoury)
SWEET Caused usually by sugar & its bases such as fructose or lactose. as well as artificial sweeteners such as saccharine. Alcohols in fruit juices or alcoholic drinks can give off the sweet taste too.
SOUR Acidic solutions such as lemon juice, lime juice and vinegar taste sour. Unripe fruits and some foods that are 'off' can also become acidic and taste sour.
BITTER Produced by a variety of different substances & generally identified as undesirable or unpalatable. Toxic chemicals produced by poisonous plants give off the bitter taste also.
SALTY Produced by salts containing sodium, such as sodium chloride, and sodium bicarbonate. Almost every fluid in our body contains salt, so we need salt to survive.
UMAMI A rich 'mouth-filling' taste in protein-based foods due to the presence of glutamate. (meats, aged cheese, ripe tomato, mushrooms and soy sauce contain glutamate.
