Term | Definition |
Six row barley | A barley with six seeds arranged around the spike compared to two row barley with just two developed seeds and four sterile seeds. |
Aleurone layer | A layer of active cells below the barley husk which produce enzymes to digest the endosperm contents. |
Friable | A term to describe the modification of a barley seed. Well modified, friable seeds are crunchy when chewed while poorly modified seeds are hard. |
Steeping | The soaking of barley seeds to increase moisture to 45% and so initiate germination. |
Kilning | The drying of germinated barley to reduce moisture to 4% and stabilize it for mashing. |
Modification | The process whereby the endosperm of the barley grain is softened by the digestion of beta glucan and protein using enzymes from the aleurone layer. |
