Aleurone layer | A layer of active cells below the barley husk which produce enzymes to digest the endosperm contents.

Friable | A term to describe the modification of a barley seed. Well modified, friable seeds are crunchy when chewed while poorly modified seeds are hard.

Steeping | The soaking of barley seeds to increase moisture to 45% and so initiate germination.

Kilning | The drying of germinated barley to reduce moisture to 4% and stabilize it for mashing.

Modification | The process whereby the endosperm of the barley grain is softened by the digestion of beta glucan and protein using enzymes from the aleurone layer.
