Detailing Taste
| Term | Definition |

| Gustation | The sense of taste involving detection of substances in the mouth by taste receptors. |
| Papillae | Raised structures on the surface of the tongue that can detect sweet, sour, salt, bitter, acidic, and umami tastes. |
| Sweet | A taste detected by the papillae which the brain interprets as a biological need for energy/pleasure. |
| Sour | A taste triggered by acids interpreted as biologically unripe/spoiled food. |
| Bitter | Taste sensation characterized by an unpleasant flavor that signal a protective mechanism to avoid eating it. |
| Salty | Taste sensation that can signal food consumption, but can be perceived pleasantly and unpleasantly. |
| Umami | The savory taste sensation that enhances flavor influencing preferences, and eating behaviors. |
