3.2 Understanding customer requirements

| customer requirements | These may include ethical diets, religious diet restrictions, vegetarian and semi-vegetarian diets, and food allergies and intolerances. |
| ethical diet | People who follow this kind of diet are concerned about the impact made by their dietary choices on people, on animals, or on the environment. |
| locally sourced food | This may be preferred by those following an ethical diet, because the further food has had to be transported, the greater the impact on the environment due to the burning of fuel in transport. |
| fair trade | These products are those for which a fair price has been paid to the producers (for example the growers of coffee beans) by the company that sells the product. |
| animal welfare | This must be maintained to certain legal standards in the farming of animals. |
| religious diet restrictions | These apply to many people, including Muslims, Hindus, Sikhs and Jews, |
| Islam | People who belong to this religion eat halal (lawful) foods and do not eat haram (prohibited) foods. |
| halal | The term for foods that it is lawful for Muslims to eat. For example, meat that has been slaughtered in a certain way, to remove the blood. |
| haram | The term for foods that it is prohibited for Muslims to eat, including pork, crustaceans, blood and alcohol. |
| Hinduism | People who belong to this religion avoid beef because the cow is considered a holy animal. Many are vegetarian, and avoid alcohol. |
| Sikhism | For people who belong to this religion it is forbidden to eat meat from animals slaughtered according to religious guidelines. They do not consume alcohol. |
| Judaism | People who belong to this religion require kosher food. |
| kosher | Food that it is in accordance with Jewish law. For example, the only meat that may be eaten is from animals that have cloven hooves and chew cud. |
| Vegetarianism | The avoidance of eating meat. |
| Veganism | The complete avoidance of animal products, including for food. |
| Pescetarianism | The avoidance of eating meat other than seafood. |
| Flexitarianism | A diet that is primarily vegetarian, but occasionally includes meat. |
| food allergy | An immune system reaction to certain kinds of foods, which in some cases can be so severe as to be life-threatening. |
| food intolerance | An adverse reaction of the digestive system to certain kinds of foods, causing discomfort or sickness because the individual is unable to process that particular food normally. |
