What is a food containment? Substances that make food unfit for use
What are foodborne illnesses? What causes them? Sickness caused by eating food that contains a harmful substance.
List four food safety practices. Keep yourself and your kitchen clean / Don't cross - contaminate / cook food throughly / Refrigerate food promptly
Describe the single most effective way to prevent the spread of bacteria. The 20 - second scrub (sing abs and scrub hands with hot water and soap)
What are some ways to keep your kitchen clean and limit bacteria? Keep pets out of kitchen / Wash work surfaces and utensils in hot sudsy water / Wash the tops of cans / Change dishtowels often.
Why is it a good sanitary practice to wash dishes immediately after a meal? Dirty dishes harbor disease causing bacteria.
Explain how to prevent cross contamination. Don't let raw meats drip on other foods / keep foods separate / wash every surface food has touched with hot soapy water / put cooked food on a clean plate
List the food safety guidelines you should follow when cooking. Cook food thoroughly / Refrigerate promptly using safe enternal temperature /store it properly / don't cross containimate.
How should you care for leftovers? Refrigerate properly / cover in wrap before putting in fridge
What should you do with spoiled food? Must be discarded completely.
List at least three ways to protect the quality of stored food. Buy only what you need / follow package directions for storing an item / follow the principle of first in first out which means new stuff behind the old.
How and where should you store food at room temperature? Cabinets should be clean and dry / Not near or above heat.
Name the types of food that should be refrigerated. Foods that were refrigerated in the store / Most fruits and vegetables / whole grain products / baked products with fruit or filings.
Why does a full freezer work best? Frozen items act like ice blocks.
How can you prevent freezer burn? Wrap everything tightly.
What is the role of the Food Drug Administration (FDA)? Charged with the overall safety of the food supply.
Why are items on the GRAS list not checked intensely by the FDA? Generally recognized as safe / long history of being safe
Name three types of fat replacers. Carbohydrates / protein fat based replacers / Lipid Fat replacers
Why is irradiation used? Why are some people concerened about using it? Used to increase shelf life / Does not make food radioactive.
What is the role of the Environmental Protection Agency (EPA) in food safety? Regulates the disposal of wastes generated by processing.
What is the role of the Centers for Disease Control (CDC) in food safety? Lead federal agency for protecting the health and safety of food.
