What are the two main pasta ingredients? What sometimes gets added? Semolina Flour, water, and sometimes eggs
What forms does pasta come in ? Dried and Fresh
How many varieties does dried pasta come in? Thousands
Explain the relationship between pasta and the sauce you use it with ? - Tradition - Thickness of sauce compared to size and shape of noodles
How can you test the freshness of pasta ? If it breaks
Where did pasta originate? Nobody knows for sure
What are some nutrients found in pasta ? (3) 1. Carbohydrates (carbs) 2. Proteins 3. B Vitamins
What are some characteristics of dried pasta ? (4) 1. Comes in a lot of shapes 2. Comes in different flavors and colors 3. Should snap 4. Always on a shelf in bag or box
What are some characteristics of fresh pasta ? (4) 1. Refrigerated or Frozen 2. Fewer shapes 3. Often stuffed (Ravioli) 4. Faster to cook (because it soaks up the water faster)
Where do you find pasta in grocery stores? Dried : Grocery aisle Fresh : Fridge or Freezer
How should dried pasta be stored and where shouldn't it be stored ? Cabinet or Pantry and it shouldn't be stored in a fridge or freezer.
How should fresh pasta be stored Fridge or Freezer
How should leftover pasta be stored ? Air-tight container in the fridge
How can pasta be cooked? Boiled or Baked
Seven Steps to Boil Pasta : 1. Big pan & Lots of water 2. Add salt (optional) 3. Bring water to a boil and add noodles all at once 4. Stir often 5. Test to see if done 6. Drain in a colander (have cold water running) 7. DO NOT cool or rinse pasta
What does mise-en-place mean ? Have everything ready to go

What does Al Dente mean ? The perfect bite, not overdone (mushy) or underdone (chewy)
If you bake pasta what don't you want to do ? Don't boil noodles the full time
