Term | Definition |

Carbohydrates | broken down into glucose to feed our body’s cells. They provide fuel to give our bodies energy. |
Starch | found in nature in the form of wheat, rice, and potatoes |
Sugar | Naturally occurring like those in milk or fruit and added sugars like in regular soda, sweets and baked goods. |
Fiber | the indigestible part of plant foods that do not produce energy, including fruits, vegetables, whole grains, nuts and legumes |
Simple Carbohydrate | quick releasing but short-term energy |
Complex Carbohydrates | break down slower = long-lasting energy |
Proteins | Proteins are used mainly to help the body grow and repair worn-out or damaged parts. |
Amino Acids | Chemical building blocks that make protein |
Nine | The amount of amino acids are body CANNOT make |
Essential amino acids | The amino acids are body cannot make |
Complete Proteins | Animal sources that contain all 9 amino acids |
Incomplete Proteins | Plant sources that lack all 9 amino acids |
Fats | Substances that provide energy, build brain cells, help absorb certain vitamins, and insulate our bodies. |
Unsaturated Fats | Healthier fats found in cooking oil such as vegetable and olive oil, fish, nuts, and seeds. |
Saturated Fats | Unhealthy fats that occur naturally in animal based foods such meat and dairy products. |
Trans Fats | The worst type of unhealthy fats - liquid oils turned into solid fats during food processing. |
Cholesterol | Fatlike substance found in animal cells (including humans) needed to build cells and make vitamins and other hormones |
Vitamins | made by plants or animals which we take in when we eat them. They help fight infections, store and use energy, repair cells, and heal wounds. |
Antioxidants | substances that protect body cells and the immune system from harmful chemicals in the air, in certain foods, and tobacco smoke. |
Water Soluble Vitamins | Vitamins that dissolve in water and pass easily through the bloodstream. They are need everyday. |
Fat Soluble Vitamins | Vitamins are absorbed and transported in your fats. |
Minerals | Help with specific body tasks and become part of your body like your teeth and bones. They are found naturally in the earth (soil, sea, rock, etc.). |
Water | Regulate temperature, deliver nutrients to cells, get rid of waste |
