| 2 types of carbs | Simple and complex |
| Simple carbs | Good: Fruit and honey. Bad: processed food, empty calories. You will crave these if you eat them. |
| Complex carbohydrates | potatoes, yams, peas, beans. |
| Building blocks of carbohydrates | Monosacharides (most important), Disacharides (pairs of monosacharides), polysacharides (chains of monosacharides) |
| Monosacharides | Simple carb! Glucose (most sweet), fructose (some sweet), galactose (weak sweet) |
| Disaacharides | Simple carb! Glucose + glucose = maltose. Glucose + fructose = sucrose (table sugar). Glucose + galactose = lactose (milk sugar) |
| Polysaccharides (glycogen) | Complex carb! Storage from of glucose. Glycogen. Stored in 2 places: liver and muscles. Muscles rely on it's own glycogen stores. The rest of the body uses the liver's glygogen. |
| Plysaccharides (starches) | starches are a form of glucose stored in plants. Good sources of grains, rice, wheat, tubers |
| Polysaccharides (fiber) | soluble and insoluble. Soluble: aids in lower cholesterol. Insoluble: aids in regulation. Helps with digestion process by stimulating peristalsis. Good sources: veggie, fruit, beans, nuts, seeds, lentils, dry peas |
