lipid | organic molecule that is relatively insoluble in water and soluble in organic solvents |
oil | a lipid that is liquid at room temperature |
fat | a lipid that is solid at room temperature |
fatty acid | a type of lipid consisting of a chain of carbons with a methyl(-CH3) group and a carboxylic acid (-COOH) group at the end |
alpha end | the end of a fatty acid with a carboxylic acid group |
omega end | the end of a fatty acid with a methyl group |
chain length | the # of carbons in a fatty acid's backbone |
saturated fatty acid(SFA) | a fatty acid that contains only C-C single bonds |
monounsaturated fatty acid(MUFA) | a fatty acid that contains one C-C dbl bond |
polyunsaturated fatty acid(PUFA) | a fatty acid that contains more than one C-C dbl bond |
cis dbl bond | hydrogen atoms are positioned on the same side |
trans dbl bond | hydrogen atoms are positioned on opposite sides |
trans fatty acid | a fatty acid containing at least one trans dbl bond |
