Grains+Legumes=complete protein. Legumes+nuts or seeds=complete proteins. Grains, legumes, nuts or seeds + milk (or nau lactos)= complete protein Grains: Brown rice, Barley, Corn Meal, Millet, Oats, Rye, Whole wheat. Legumes: Beans, Soy, Lentil, Peas, Tofu. Nuts/Seeds: Almonds, Brazil nuts, cashews, pecans, walnuts, pumpkin/sesame/sunflower seeds
Vegans need to obtain B12 from other sources such as: brewer's yeast, vitamin suplement or food fortified qith B12
Iron from plants is no absorbed as efficently so vegans should eat iron-rich foods such as: Green leafy vegetables, whole grains, raisins and molasses, and iron-enriched foods
Vegans need to eat food rich in vitamin C each meal to help absorb iron. Cancil is a concern only for strict vegans. It can be rpevented by eating: soy milk, tofu fortified witch Calcium, and leafy green vegetables
Malnutrition: Lack of necessary or appropriate food substances. Includes both under and overnutrition
Overnutrition: Caloric intake in excess of daily energy requirements, resulting in stored adipose tissue.
Undernutrition: insuficient intake of nutrients caused by inapropiate intake, digestion or absorption of food. May be caused by dysphagia, anoreia, vomiting, etc
Undernutrition is associated with marked weight loss, generalizes weakness, altered function abilities, delayed wound healing, ↑ to susceptibility toinfection, ↓ immunocompetence, impaired pulmonary function and prolonged lenght of hospitalization Protein-Caloric Malnutrition (PCM): depressed visceral proteins (e.g. albumin) wt. loss, and visible muscle & fat wasting
BMI levels: <16=__ 16-10=__ 20-25=__ 26-30=__ 31-40=__ >40=__ BMI levels: <16= malnourished 16-10=underweight 20-25=normal 26-30=overweight 31-40=obese >40=morbidly obese
